I’ve been getting quite a few comments from readers about how ‘challenged’ they feel when it comes to baking. That got me thinking about one very important message I wanted to share with all of you: if I’m able to bake with my incredibly scattered pregnant brain, then you most certainly can too! All you need is a sweet appetite and a willingness to try (read on for a baking mantra).

Just the other day I opened a carton of eggs, took the ONE egg left, tossed it in the trash and kept the empty carton in my hand. And the day before that? I pumped hand soap ON my toothbrush. Yup, not toothpaste, HAND SOAP! I have also been known to leave dirty spatulas in the fridge for no apparent reason these days. This doesn’t even include the amount of times I’ve forgotten what I’m about to say mid-sentence or have walked into the grocery store and walked right back out because I couldn’t remember what I was there for! I’ve since resorted to lists to remember what I need WHEN I need it.
My point in telling you all this? If I can keep my brain functioning long enough to follow instructions and pour the right measurements into my measuring cups, then you can too! Besides, what’s the worst that can happen? A caved-in cake. An under-cooked brownie. Just toss that sucker out and start a new batch. No harm done. Baking is a great way to channel positive energy and it always (and I mean always) brings a smile to people’s faces. Why not give it a try?
