Yes. Bacon. Because why not. Whoever invented bacon deserves a lifetime achievement award. Or a Nobel Peace Prize. Because if everyone ate bacon, there would be nothing but happiness and peace in this world.
I love bacon. The smell, the taste, the crunch. It makes everything taste…the way it should. And so naturally, why not bacon in chocolate chip banana nut muffins? Sweet and salty. Yum.
This outstanding revelation came to me this morning as I was eating bacon and eggs. I thought “what can I bake with bacon so I can eat bacon with my entree and my dessert.” Think. Think. “I know! Muffins!” Alfajores may be my next victim but I decided to leave those alone for now. Dulce de leche and bacon. Mmmm.
So here we are. Chocolate Chip Bacon Banana Nut Muffins. I think I might patent these. You know what they say. Once you go bacon you never go back.
~ 1 cup pecans, toasted and coarsely chopped
~ 1 3/4 cups all-purpose flour
~ 3/4 cup sugar
~ 1 tsp. baking powder
~ 1/4 tsp. baking soda
~ 1/4 tsp. salt
~ 1 tsp. ground cinnamon (I used 1/2 tsp. and it was perfect as I find a full tsp. a little too much for my taste)
~ 2 large eggs, lightly beaten
~ 1/2 cup unsalted butter, melted and cooled
~ 3 ripe large bananas, mashed well (about 1-1/2 cups)
~ 1 tsp. vanilla extract
~ 3/4 cup semisweet chocolate chips
~ 4 strips of bacon, cooked until extra crispy
~ Preheat oven to 350
~ Butter muffin pan or line with paper cups
~ On baking sheet, bake nuts for 8-10 minutes or until lightly toasted; let cool
~ In mixing bowl combine the flour, sugar, baking powder, baking soda, salt, cinnamon, chocolate chips, bacon and nuts; set aside
~ In another mixing bowl combine mashed bananas, eggs, melted butter, and vanilla
~ With rubber spatula or wooden spoon, lightly fold wet ingredients into dry ingredients until JUST combined and the batter is thick and chunky; DO NOT over mix
~ Scoop batter into muffin pan
~ Bake until muffins are golden brown and toothpick inserted in center comes out clean, about 30 minutes
~ Cool on wire rack
